Tex-Mex Chicken Foil Packets Recipe
1.) Chop up 4 boneless skinless chicken breasts into ½ cubes
2.) Add to large Ziplock bag
3.) Add taco seasoning and mix well
4.) Add chopped onion, drained white chili beans, drained Ro-Tel diced tomatoes, drained corn niblets to the bag
5.) Lightly spray foils with cooking spray
6.) Place ½ to 1 cup chicken mixture on foil
7.) Grill or place on fire coals for 10 minutes each side
8.) Add green onions and cheese and reseal for 3 minutes to melt the cheese
9.) Add sour cream and taco sauce to taste
10.) Enjoy!
Ingredients
1 Onion – chopped
1 15 oz can white chili beans drained and rinsed
1 10 oz can diced tomatoes drained
1 10/11 oz can mini corn or niblets
1 Taco Seasoning Packet
1/2 cup shredded cheese Mexican blend
4 boneless skinless chicken breasts diced – I chopped mine ahead of time
Bonus Ingredients
Green onion – chopped
Sour Cream
Taco Sauce
Other items needed:
Aluminum foil
Cooking spray
Large Ziplock bag
